Dry rubs are usually mixtures of ground spices and herbs that are pressed or rolled onto cuts of meat before any cooking procedures take place. In fact, waiting several hours (which might also require refrigeration) is often advised so that those flavors can permeate the tissues of the meat. Stripling's Pork Rub is extraordinary in this recipe (below) because it blends well with the fresh rosemary, lemon, and garlic. The scents are amazing, and the taste is succulent. Rosemary Skillet Pork Chops • cup olive oil 2 teaspoons chopped fresh rosemary 1 • teaspoons Stripling's Pork Rub 2 individual garlic cloves, crushed Dash of lemon juice 6 boneless, center-cut loin pork chops Several whole sprigs of rosemary Dash of lemon juice Combine chopped rosemary, pork rub, and garlic in small bowl. Sprinkle both sides of pork chops with a little olive oil, then sprinkle with spice mixture until well coated. Use remainder of olive oil to grease the interior of an iron skillet. Cook pork chops on medium high heat to desired doneness.
