On those occasions when gravy seems just too heavy to serve with wild game, we strongly suggest Stripling’s Vidalia Onion Country Dipping Sauce. In addition to poignant spices, it contains real Italian seasonings and fresh sweet Vidalia onions. This sauce is terrific in Country Wild Duck (see recipe below) or with whatever wild game is in season.
Country Wild Duck
- 1 whole duck, de-feathered and cleaned
- 1 carton mushrooms, sliced
- 1 c. sliced water chestnuts
- 1 (12 oz.) bottle Stripling's Vidalia Onion Creamy Country Dipping Sauce*
- Cavender's Greek Seasoning
Directions:
Pull any remaining feathers off duck; score the fat down to the flesh. Rub duck with Cavender's Greek Seasoning. Have duck sitting on a rack which is situated in a pan at least half filled with water. Sprinkle mushrooms and water chestnuts across duck. Cook at 375 degrees for 3 hours or until meat is tender. Serve as an appetizer or as the main meat, using Stripling's Vidalia Onion Creamy Country Dipping Sauce as a condiment. *1(12 ounce) bottle of Stripling's Vidalia Onion Creamy Country Dipping Sauce will meet the recipe requirement and leave a nice amount remaining for other uses!
