If you delight in the exuberant 'sting' of a salad coated with a vinaigrette, then you will likely marvel at Stripling's Vidalia Onion Sweet Pepper Vinaigrette. Instead of going the fruity route, we incorporated the subtle, sweet nuances of both Vidalia onion and sweet pepper. This vinaigrette is a wonderful marinade in the recipe (below) which also brings in flavors such as pimiento and purple onion.

Chickpea, Artichoke, Pepper Salad

• 2 full-sized cans (15 oz.) canned chickpeas, drained
• 1 c. halved cherry tomatoes
• 1/2 c. diced celery
• 1/4 c. chopped purple onion
• 4 Tbsp. drained pimiento
• 1 c. canned quartered artichoke hearts, drained
• 1/2 c. Stripling's Vidalia Onion Sweet Pepper Vinaigrette Dressing*

Directions:

Combine all ingredients in large bowl, making certain that dressing is evenly distributed.
