The height of summer is indeed the best time to make this salad (see recipe below) – right when the squash is coming in so much that everyone has more than their share. If you can sneak down to the Gulf to grab some fresh shrimp, then this salad will really stand out, particularly when you add Stripling's Vidalia Onion Summer Tomato Dressing. But for whatever your chosen purposes, this dressing has no fat and no cholesterol, so it's great when serving a crowd of folks who may be in a health-conscious mode.
Summer Shrimp & Tomato Basil Salad
- 1 1/2 lb. medium shrimp, steamed and peeled
- 1 1/4 c. yellow squash, cut into discs
- 1 1/4 c. zucchini squash, cut into discs
- 2 whole fresh garden tomatoes, cut into wedges
- 2 Tbsp. chopped fresh basil
- 2/3 c. Stripling's Vidalia Onion Summer Tomato Dressing*
- Dash of garlic
Directions:
Mix shrimp and vegetables in large mixing bowl. Add in dressing, basil,and garlic to taste. Chill for a minimum of four hours to let flavors permeate. Serve chilled as a light summer meal. *1 (12 ounce) bottle of Stripling's Vidalia Onion Summer Tomato Dressing will meet the recipe requirement and leave a nice amount remaining for other uses!
