Stripling's Bread and Butter Pickles give an amazing 'zing' to appetizer trays. For some reason, they often are included at fish fries, so we felt that this recipe for Salmon Croquettes would be even more enticing with little bits of our pickles inside.
Serving suggestion
Salmon Croquettes
1 can (14.75 ounce) red salmon
1 egg
6-8 spring onions, chopped
¼ cup Stripling's Bread and Butter Pickles*, drained and diced
2 tablespoons lemon juice
½ cup corn meal
Several dashes of Tabasco sauce
pinch of salt (optional)
Drain off excess liquid around salmon and check for errant bones. Beat egg so that yolk meshes into white. Chop both the white and green part of onions into small, 3/8 inch chunks. Dice the Stripling's Bread and Butter Pickles into petite pieces. Mix all ingredients together. Salt to taste.
Form croquettes that are slightly smaller than hamburger patties. Fry in a skillet using oil of choice. Absorb excess grease by placing on sturdy paper towels or even brown grocery bag.
*1 (16 ounce) jar of Stripling's Bread and Butter Pickles will meet the recipe requirement and leave a nice amount remaining for snacking or other uses!

Sweet Fire Tuna Salad
1 can of Tuna Fish, drained
2 stalks of Celery, chopped
1 fresh Apple, chopped
2 Boiled Eggs, chopped
1 medium Onion, chopped
½ cup of Mayonnaise
¼ cup of Stripling’s Sweet Fire, chopped
Combine all ingredients together
Chill and serve.

Blackberry Jam blackberries are slowly cooked with pure cane sugar and a little lemon juice to create this southern favorite.
Serving Suggestion:
Blackberry Pudding
Ingredients:
4 eggs
1 cup sugar
1 cup blackberry jam (8 ounces or more)
1 cup sweet milk
1-1/2 cups flour (self-rising)
1 teaspoon baking powder (optional)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Directions:
Beat eggs until light, beat in sugar and jam. Combine dry ingredients, stir with milk, pour into buttered casserole dish and bake in 350 degree oven for 30 to 40 minutes. Serve warm with sweet cream.

Serving Suggestion:
Crab & Country Ham Stuffed Mushrooms
3 lbs jumbo lump crab meat
2 c. bread crumbs
1/2 c. sour cream
1/2 c. mayonnaise
1 c. fresh chives, chopped
1/4 c. fresh oregano, chopped
1/4 c. lemon juice
2 tbsp. worcestershire
4 tbsp. butter
2 tbsp. garlic, chopped
1 red onion, diced
2 red bell peppers, diced
2 green bell peppers diced
1 lb country ham, diced
pepper to taste
5 dozen large fresh mushrooms, cleaned & stems removed
Preheat oven to 375 degrees. Lightly grease a baking sheet.
Combine the first 8 ingredients and set aside.
In a large skillet melt the butter. Saute the garlic, peppers, onion and ham until crisp and tender. Add to the crab meat mixture.
Place mushroom caps on a baking sheet. Stuff each with the crab and ham mixture.
Bake until heated through, about 10-12 minutes. Garnish with additional diced red bell pepper.
